Dark chocolate wine cake

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup red wine (such as Merlot or Cabernet Sauvignon)
  • 1/2 cup hot brewed coffee
  • For frosting:
    • 1/2 cup unsalted butter, softened
    • 2 cups powdered sugar
    • 1/4 cup red wine
    • 1/4 cup unsweetened cocoa powder
    • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Stir in the red wine until smooth, then add the hot coffee and mix until the batter is well combined and smooth.
  6. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the pan on a wire rack before removing it.
  8. While the cake is cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, red wine, cocoa powder, and vanilla extract, and beat until smooth and creamy.
  9. Once the cake is completely cool, frost the top and sides with the prepared frosting. Serve and enjoy!
