Ingredients:

For the Roast Chicken:

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 425°F (220°C). Rinse the chicken inside and out, then pat it dry with paper towels. Season the chicken generously with salt and pepper, both inside and out.

  2. Place the lemon slices, minced garlic, and fresh thyme sprigs inside the cavity of the chicken. Tie the legs together with kitchen twine for even cooking.

  3. Place the seasoned chicken in a roasting pan. Drizzle the olive oil over the chicken, rubbing it evenly to coat the skin.

  6. In a small bowl, mix the butter and flour to form a paste (roux). Whisk the roux into the simmering sauce until smooth and slightly thickened. Season with salt and pepper to taste.

  7. Once the chicken is cooked, remove it from the oven and let it rest for about 10 minutes before carving.
